Sam Fox shares insights on labor, operations and food trends

The veteran restaurateur also discusses his partnership with Justin Timberlake and why wings are so popular with pizza

 

Sam Fox has been an employee for two years now.

The founder of Fox Restaurant Concepts sold his company to The Cheesecake Factory in October of 2019 and now collects a paycheck from them while running the business that he founded.

He also has a couple of side hustles, such as The Twelve Thirty Club in Nashville, a 32,000-square-foot concept with 300 employees that he has been opening in phases in partnership with entertainer Justin Timberlake.

Fox is also working on his first hotel, the 141-room Global Ambassador hotel, which is slated to break ground later this year.

Meanwhile, he has around 65 restaurants to run under 11 different brands, including Culinary Dropout, Flower Child, Zinburger, Dough Bird and his latest one, Fly Bye, which was born out of the pandemic and features pizza, wings and chicken tenders for takeout and delivery.

Fox recently discussed his work, his plans for the coming years and how he copes with labor and supply-chain challenges while continuing to move forward with new projects.
