Del Taco taps Wilroy for R&D post

LAKE FOREST Calif. Del Taco on Wednesday said it had made two changes to its executive team, including the appointment of former Pick Up Stix executive chef Ed Wilroy as senior director of research and development. The 510-unit quick-service chain also named Stacy Marler senior director of quality assurance and food safety.

Wilroy has 15 years experience in culinary development and education.

Marler, a 13-year veteran with Del Taco, was previously Del Taco’s director of quality assurance and food safety. Before that he was with Carl Karcher Enterprises, once the parent to the Carl’s Jr. brand. Marler also owned a food-safety consulting firm where he helped manufacturers develop HACCP programs.

Based here, Del Taco is owned by Nashville, Tenn.-based Sagittarius Brands.
