LA HABRA Calif. The operator of the pioneering El Cholo casual-dining chain is reportedly poised to spin off a fast-casual concept called Café Maiz.
Scheduled to open early next year in Mission Viejo, Calif., Café Maiz is expected to feature an exhibition kitchen and outdoor dining. It would be the first foray into the fast-casual sector by Restaurant Business Inc., which operates four El Cholo Mexican restaurants in southern California.
RBI also operates Cannery Newport, The Cat & The Custard Cup, and the more upscale Sonora Café in Los Angeles.
