Classical cocktail ripe for modern makeovers

This beloved tipple, a popular highball in Mexico, is making its mark on menus north of the border.

A Paloma is traditionally made of tequila, lime juice and grapefruit soda, but bartenders are creating modern interpretations and adding artisanal touches. There is plenty of opportunity to explore with syrups, bitters and other techniques to layer in complementary flavors (sweet, savory or botanical) to add depth to the classic cocktail.
