Sizzler to test full-service, Express versions

CULVER CITY Calif. The Sizzler limited-service restaurant chain is planning to test a new format that features table service and a full bar.

In addition, Sizzler plans to test an Express version of its core concept later this year in Los Angeles. The 1,200-square-foot Express format, featuring a limited menu and salads, would be used in airport or college campus locations.

Expected to open in Las Vegas late this summer, the 5,000-square-foot prototype would be modeled after Sizzler units throughout Asia, which are full service. In the U.S., Sizzler guests pay as they order, then sit until the number of their order is called. Alcohol options are limited to beer and wine. A full-service format with higher potential bar sales could foster direct competition with mainstream casual-dining concepts.

Ken Cole, president and chief executive of franchisor Sizzler USA, said pricing will be the same under a full-service format and the prototype will include the signature self-serve salad bar. The company may also test a limited-service format at lunch, switching to full service at dinner. The prototype is a franchise.

Cole added that Sizzler has signed a letter of intent to open the 233-unit chain's first restaurant in Mexico.
