Keller's Bouchon group picks back-office system

YOUNTVILLE Calif. Chef-restaurateur Thomas Keller's multiunit Bouchon restaurant and bakery operation, based here, has selected for its back-office-management software Eatec Corp.'s Web-based EatecNetX product, the vendor said.

Keller is known worldwide for his fine-dining restaurant here, The French Laundry, among other concepts. His Thomas Keller Restaurant Group, or TKRG, operates Bouchon bistros in Yountville and Las Vegas, as well as Bouchon Bakery outlets in those cities and in New York.

TKRG information technology manager Will Pacio said EatecNetX will aid in tracking purchases, production, transfers and usage to help "identify waste and variance problems" to "control food costs" and "improve quality control." He said features of Emeryville, Calif.-based Eatec's software will permit Bouchon to "more easily manage recipe development and perform cost analysis."
