After more than 30 years of serving a classic French-style lunch, the Escoffier Restaurant at the Culinary Institute of America in Hyde Park, N.Y., will close during the afternoon.
“With formal French dining it is more conducive to dinner service than lunch,” said CIA spokesman Jeff Levine. The restaurant will remain a dinner-only operation run by students and instructors for “the foreseeable future.”
Escoffier, or The E-room as many students and alumni call it, is currently closed for summer break and refurbishing.
“It’s getting a whole new facelift,” said Jen Purcell, associate dean for hospitality and service management at the CIA. “It will be modernized with more subdued earth tones on the wall treatments and new curtains, carpet and chairs.”
The Escoffier Restaurant was inducted in Nation’s Restaurant News’ Fine Dining Hall of Fame in 2000.
