Maggiano’s names Dominique Bertolone as president

Former MGM Resorts executive joins Brinker’s Italian restaurant division

Brinker International Inc. has named Dominique Bertolone to the position of Maggiano’s Little Italy president, the company announced Friday.

The Dallas-based casual-dining company, which also owns the Chili’s Grill & Bar brand, said Bertolone most recently served as senior vice president of food and beverage strategy and development at MGM Resorts International in Las Vegas, Nev. Bertolone succeeds Steve Provost, who retired from the Maggiano’s president post in August.

"His experience leading all types of foodservice concepts has direct application to accelerating the three Maggiano's channels of dine-in, off-premises and banquets, as well as developing the next generation of Maggiano's restaurants. He also has an impressive track record of leading employee engagement, developing one-of-a-kind guest experiences, achieving operational excellence, and elevating brands.”

Prior to MGM Resorts, Bertolone worked at Bellagio Resort & Casino for 15 years, including positions as the property's director of service, executive director of food and beverage, and vice president of food and beverage. Before moving to Las Vegas, he worked at the SBM Hospitality Group in Monaco, where he assumed different roles in several palaces and resorts such as Hotel de Paris, Monte Carlo Beach, Monte Carlo Golf Club and Palais Princier de Monaco.

Bertolone is from Monaco and speaks fluent English, French, and Italian.

Maggiano’s has 52 restaurants. Parent Brinker International, founded in 1975, has more than 1,600 restaurants and also has the It's Just Wings virtual brand.
