Flavor of the Week: Giardiniera spices up sandwiches

Giardiniera is a condiment for sandwiches, hot dogs and pasta salad, traditionally used on the Italian beef sandwiches of Chicago.

Giardiniera is in the Adoption stage – it’s gaining traction on menus but is still considered distinctive. It can be found at independent casual dining and progressive fast-casual restaurants.

Panzano Restaurant in Denver serves a dish called Polpo Carbonizzato, which is charred octopus with pickled giardiniera, smoked ricotta cream and Parmesan.
