Saisei roll

Saisei roll

Zentan, Washington, D.C.

This roll, whose name means “rebirth,” was created by sushi chef Jason Zheng to help raise money for victims of the recent earthquake and tsunami in Japan.

It contains tempura cuttlefish and, in homage to New Orleans and its recent struggles with natural disaster, spicy crawfish.

Each piece of the roll is topped with a thinly sliced apple square and flying fish roe.

It is being sold with a glass of sake for $16, $10 of which goes directly to the American Red Cross.
