2019 Runner-Up: Squash Parmesan made with RITZ Crackers

This mouthwatering squash dish is the perfect flavor combination for the holidays. The beloved buttery flavor of RITZ Crackers, combined with rich, nutty Parmesan cheese will have everyone asking for more. This recipe was created as part of a Farm-to-School program. Five-hundred-plus students had the opportunity to taste test these delicious "Squash Pizzas."

12 Servings/1/2 cup


4 cups sliced yellow summer squash (3 medium)

3 Tbsp olive oil

1/2 tsp Italian seasoning or dry ranch mix

3/4 cup RITZ Crackers, crushed

3/4 cup grated Parmesan cheese                              


1. Place sliced squash in a large bowl. Add oil and seasonings. Toss to coat.

2. In a shallow bowl, mix crushed RITZ crackers and Parmesan cheese. Dip squash in crumb and cheese mixture to coat both sides, patting to help coating adhere.

3. Place squash on parchment-paper-lined baking sheets. Bake in a preheated 450 degree F oven for 20 to 25 minutes or until golden brown, rotating pans halfway through the baking process.

4. Serve with marinara or your favorite dipping sauce.
