CafÉ Matou in Chicago Promotes Foods and Wine of France’S Loire Valley

CHICAGO —Café Matou, a traditional French restaurant here, will showcase the food and wine of France’s Loire Valley during May and has scheduled a special five-course dinner May 8.

The dinner will feature mixed garden greens broth with asparagus; slow-cooked, caramelized pork belly with grilled toast points and sour-marinated turnips; Atlantic salmon poached in court bouillon and served with a watercress cream sauce; duck braised with wild mushrooms, fresh thyme and celery root; and puff pastry with almond-rum filling served with orange-zest ice cream and roast pear. —Café Matou, a traditional French restaurant here, will showcase the food and wine of France’s Loire Valley during May and has scheduled a special five-course dinner May 8.
