While Fogo de Chão Inc.’s corporate headquarters occupies two stories above the restaurant in Plano, Texas, the churrascaria chain is elevating the bar experience to the “Next Level.”
The 12,000-square-foot flagship restaurant, given its location beneath the corporate team, offers a testing ground for new ideas.
Fogo de Chão promoted Barry McGowan to CEO this past December to succeed Larry Johnson, who retired after 11 years as CEO and remains chairman.
McGowan talks about the “Next Level Bar” and lounge areas, which are going into remodeled locations, most recently Las Vegas, with a separate menu and elevated cocktails. The brand has found guest checks yield a higher percentage of beverage sales and appeal to Millennials.
The CEO also looks at the horizon for the brand and the industry in general.
