Restaurant food safety experts gather for 15th Ecolab symposium

Professionals discuss trends, the regulatory outlook and other issues on the horizon

More than two dozen restaurant chain food-safety professionals gathered in Nashville, Tenn., Oct. 18-20 for the 15th Ecolab Inc.-sponsored Food Safety Symposium.

The invitation-based gathering, which has been sponsored annually except for the 2020 COVID-19 pandemic year, convened at the Loews Vanderbilt hotel for sessions that ranged from the regulatory outlook to how best to engage with health inspections and health inspectors.

The keynote speaker was Steven Mandernach, executive director of the Association of Food and Drug Officials, who discussed the future of food safety and what is likely to be on the regulatory agenda for the next several years.

Other topics ranged from ghost kitchens and virtual brands and how those newer off-premises platforms approach food safety to the outlook for the COVID-19 pandemic as more guests and employees get vaccinated.
