Bubbakoo’s Burritos names Mimi Somerman chief marketing officer

The marketing veteran previously worked at Marie Callender’s, Del Taco, and Johnny Rockets

Fast-casual chain Bubbakoo’s Burritos has named Mimi Somerman as its chief marketing officer, the concept based on the Jersey Shore said. Somerman has held numerous leadership roles in marketing, including vice president of marketing for Marie Callender’s, senior VP of marketing for Mimi’s café, chief marketing officer of Del Taco, and senior vice president of marketing, purchasing, and product development at Johnny Rockets.

Founded in 2008, Bubbakoo’s offers burritos, bowls tacos, quesadillas, nachos, and its own invention, the Chiwawa, which is panko-crusted fried rice-and-cheese balls smothered in nacho cheese and a choice of toppings. Its wide variety of proteins. It also offers empanadas, chicken sandwiches and wings, plus cookies, fried flour tortilla chips dusted in powdered sugar, and other desserts.

There are currently 102 locations in 16 states with more openings slated for the coming weeks.
