Flavor of the Week: Fattoush offers fresh and versatile salad option

Fattoush is a versatile Lebanese bread salad made with fried or toasted pieces of stale flatbread mixed with greens and veggies. Vegetables like cucumbers, radishes and tomatoes, plus herbs, are cut into large pieces.

Fattoush is in the Inception stage. It’s considered a premium item that can be found on mostly fine-dining menus and at independent restaurants.

Rumi’s Kitchen in Atlanta serves Fattoush Salad consisting of heirloom tomato, herbs, romaine heart, toasted flatbread and buttermilk dressing.
