Stefan Boyd, former Noon Mediterranean CEO, has been named chief financial officer of Just Salad.
The New York City-based fast casual chain said Boyd, left, who also served as CFO at Le Pain Quotidien, will help grow the company's store footprint in new and existing markets and support ongoing sustainability efforts. He started this month in the newly created brand position.
“Stefan will be an important contributor to our continued growth and expansion and we couldn’t be more thrilled to have him on board,” Nick Kenner, Just Salad founder and CEO, said in a statement. “Under Stefan’s leadership, we will continue to execute on our mission to serve healthy, affordable, and sustainable food to more guests than ever before.”
In 2019, Just Salad expanded outside of its core markets in New York City and Chicago with the opening of locations in Florida and North Carolina. Boyd said he is looking forward to helping Just Salad build on this “explosive” growth. The company, which has about 40 units, plans to add 10 or more in 2020.
“Consumer demand for healthy, sustainable dining options is growing by the day, and we plan to deliver on that better than anyone else,” Boyd said in a statement.
Just Salad is known for its planet-friendly policies. Restaurants offer a reusable bowl, which saves more than 75,000 pounds of plastic each year. The company’s Green Standard sustainability initiative aims for “zero waste” by 2022.
The company, which named its first chief sustainability officer in early 2019, recently launched a new virtual restaurant on Grubhub called Health Tribes. The restaurant’s online menu of bowls and salads are geared for customers following specific diets such as vegan, keto, gluten-free and paleo. Most dishes are around $10.
