From unit management to beer-club loyalty, these chains distinguish themselves

Using different methods to distinguish themselves from the competition, from a breakfast-lunch counter format to full-on casual dining, these three regional chains are sparking interest:

• Jacksonville, Fla.-based Maple Street Biscuit Co. offering a restaurant-unit management model that plants a firm foundation in the community;

• Kansas City, Mo.-based 54th Street Restaurant & Brewhouse, proving that a name tweak and a slight turn of the brand ship can blow a sizable gust into its sales; and

• Huntington Beach, Calif.-based Lazy Dog Restaurant & Bar, honing its loyalty efforts with a new Beer Club in its California and Nevada stores.
