Z'Tejas to debut seasonal dishes, drinks

The 10-unit Z’Tejas Southwestern Grill chain is scheduled to roll out a new summer menu this week and later this month will introduce seasonal cocktails, including a lower-calorie Skinny Margarita.

The Southwestern-themed casual-dining chain was created by concept impresario Paul Fleming, who also developed the P.F. Chang’s China Bistro concept and Fleming’s Prime Steakhouse & Wine Bar.

Scheduled to debut on Wednesday, new dishes include Adobo Seared Pork Quesadillas, which are made with pork tenderloin marinated in adobo sauce, with jack cheese, Anaheim peppers, grilled pineapple, Baja slaw and sage aioli. Baja Shrimp Stackers include Cajun-marinated shrimp on tostadas with black beans, Baja slaw and mango salsa, topped with cotija cheese.

A Ribeye Carne Asada is also on the new menu, as is Alaskan Fresh Grilled Halibut served with mango salsa.

Also new are the Pollo Tinga Enchiladas with shredded marinated chicken in a tinga sauce made with chipotle chilies, tomato sauce and onions, and served with borracho beans and roasted corn rice. The Z’ Smoked Chicken Salad includes smoked pulled chicken over field greens with jícama, strawberries, asparagus, spicy walnuts and cotija cheese, with ranch and vinaigrette dressing.

On July 27, the restaurants also will roll out a new drink menu. Among the new offerings are cocktails made with an açai liquor, as well as an agave nectar-sweetened Skinny Margarita that contains 225 calories.

The Scottsdale, Ariz.-based Z’Tejas chain is owned by Paul Fleming Restaurants along with private-equity firm KarpReilly. The eleventh location is scheduled to open in San Antonio, Texas, in November.
