Wolfgang Puck opens French brasserie

LAS VEGAS Celebrity chef Wolfgang Puck opened two new dining spots in Las Vegas’ new CityCenter complex this week, including the first French brasserie for his growing fine-dining group.

CityCenter is an $8.5 billion development that opened in December. The 67-acre project on the Las Vegas Strip includes four hotels, two 37-story condominium towers, a convention center and a retail-and-entertainment district dubbed The Crystals, which is home to Puck’s new venues.

The new concepts include Brasserie Puck, a modern brasserie offering classic dishes such as frisee salad with poached egg, lardon and bacon dressing as well as steak frites and filet mignon au poivre.

Though many of Puck’s restaurants are influenced by French cuisine, company officials said Brasserie Puck is the chef’s first authentically French concept since he worked as executive chef and partner in the now-defunct Ma Maison in West Hollywood, Calif., three decades ago, before Puck opened his iconic restaurant Spago. Before the Austrian chef came to the United States, however, he cooked at well-known restaurants in France, including Maxim’s and L’Oustau de Baumaniere.

Brasserie Puck features a wine list that includes French, Austrian and German varietals, as well as an extensive by-the-glass program using the Vinfinity Wine Preservation System.

Heading the kitchen will be Dustin Lewandowski, who has worked for the Wolfgang Puck Fine Dining Group since 1997 and most recently served as executive chef at Wolfgang Puck Bar & Grill at the MGM Grand.

Just below Brasserie Puck on a lower floor, Puck also opened the more casual dining area called The Pods, which includes a full-service coffee bar, a cafe and a bar. The menu is described as American fare, with dine-in or takeout options for breakfast, lunch or dinner.

“We’re continually looking for ways to deliver new, innovative dining experiences that further shape the restaurant scene in Las Vegas,” said Tom Kaplan, senior managing partner of Wolfgang Puck Fine Dining Group.

Based in Las Vegas, the Fine Dining Group includes 11 concepts, such as Spago, Cut and the new Five Sixty in Dallas.
