Schussler, Levy collaborate to open 2 concepts in casino

WILKES-BARRE Pa. The concept development company run by Rainforest Cafe creator Steven Schussler has teamed up with Levy Restaurants of Chicago to open two themed restaurants at the Mohegan Sun Pocono Downs casino here.

The Hot Dog Hall of Fame occupies 1,500 square feet in the casino and Betty & Joe’s coffee and bakery covers 1,200 square feet, said Schussler, chairman of Schussler Creative Inc.

Betty & Joe’s features pastries and coffee brewed from beans that are roasted on location. Pastries also are baked on site, Schussler said. He described the decor as French 1920s with some contemporary elements.

Hot Dog Hall of Fame offers thousands of condiment combinations. “The Art of Mustard” bar includes sweet-hot, fruit, hot pepper and spirited versions of the condiment, many of which can be purchased. Other condiments include vegetables, relishes and cheese. Side dishes include made-to-order stuffed dumplings and traditional French fries, as well as sweet potato, eggplant, polenta and green bean versions.

In addition to Rainforest Cafe, which was later sold to Landry’s Restaurants, Schussler hatched a concept called T-Rex, which will open a second location with Landry’s at Downtown Disney in Orlando, Fla., in October.

Levy Restaurants operates a number of foodservice outlets at sports and entertainment venues, including the Staples Center in Los Angeles and Wrigley Field in Chicago.

The $208 million Mohegan Sun opened in July and is Pennsylvania’s first casino.
