NEWPORT BEACH Calif. Fleming’s Prime Steakhouse & Wine Bar said Tuesday it is upping the quality but not increasing the price of its $35.95 prix-fixe menu, a new version of which will be rolled out June 23 to all 63 locations.
The new summer menu, which will be available until Sept. 21, will feature main courses of filet mignon and scallops, rather than last season’s hanger steak and salmon. A roasted sesame chicken breast with cracked wheat herbed pilaf is the third and final entrée available.
The filet mignon will be peppercorn crusted and served with truffle-infused pan juices that are enriched with cream. A side of Yukon Gold potato croquettes accompanies the beef.
The broiled sea scallops will be served with roasted tomato beurre blanc sauce, as well as orzo pasta.
Each dish will have a suggested wine pairing.
As a starter, diners can choose between a spinach salad or chilled potato-leek soup. A caramelized banana crème brûlée with chantilly crème will cap off the meal.
