Diners in China taking a well-received bite out of gator meat

SHANGHAI, CHINA —Waiter, there’s an alligator in my soup.

That’s what diners at Huifu Fine-food Restaurant here are saying as the restaurant does a brisk business serving chowder and other items, including kebabs, featuring the endangered species’ head and tail, among other body parts. —Waiter, there’s an alligator in my soup.

“We do serve alligator here, but the amount is limited every day so you’d better book it at least two or three days ahead,” a restaurant staff member told the Associated Press. —Waiter, there’s an alligator in my soup.

The restaurant’s operators say their customers are, well, eating it up, and asking for more, especially the alligator soup and steak entrée. —Waiter, there’s an alligator in my soup.

“Both of them keep the natural taste of the alligator meat,” the staffer said. —Waiter, there’s an alligator in my soup.

The only problem is that the species of alligator served at the eatery is listed as critically endangered. As a result the restaurant has had to obtain a special license from China’s Forestry Ministry to serve it and meat from other reptiles that have been raised at a local breeding center. —Waiter, there’s an alligator in my soup.
