Now that Baja Fresh has found a way to shrink its usual 2,600 square feet to a potential 500 square feet, the thinking is that most new locations would comprise around 1,400 square feet, Walker indicated. With the speedline design, Baja Fresh has eliminated the costly center island that blocked customers’ view of the grill. New equipment has also helped. The new express prototype is a “go forward” strategy, Walker said.
