New units fuel Bakery-Cafe growth

This is part of the Nation’s Restaurant News annual Second 100 report, a proprietary ranking of restaurant brands Nos. 101-200 by U.S. systemwide sales and other data. This special report is a companion to the Top 100 report.      

The largest Second 100 Bakery-Cafe chains, in terms of  total units, shored up their performances in the Latest Year by closing underperforming locations, while fast-growing smaller brands expanded their reach by opening new store formats and entering new markets.

Bruegger’s Bagels and Au Bon Pain, which ended the Latest Year at 274 and 207 units, respectively, closed a net 10 and three restaurants in the period, while improving unit economics. Meanwhile, Le Pain Quot
