Restaurants pair the flavorful side dish with more than just Korean food

Kimchi is a staple side dish of Korean cuisine, but the spicy, fermented cabbage is showing up in tacos and fried rice, on burgers and sandwiches, and a variety of other dishes that aren’t traditionally Korean. With the Winter Olympics in PyeongChang, South Korea, underway, we take a closer look at the dish.
