Flavor of the Week: Galangal gains traction in global pantry

Galangal is a relative of ginger and turmeric used widely in Thai, Malaysian, and Indonesian cuisines. Its flavor can be compared to ginger, but with a characteristically sharp taste and citrus and pine overtones. 

Galangal is in the Inception stage. It’s considered a premium ingredient that can be found on mostly fine-dining menus.

Noodles & Company

Denver-based Noodles & Company serves Thai Green Curry, consisting of shrimp with a sweet coconut green curry sauce with galangal, rice noodles, pineapple, broccoli, red onion, snap peas, lime, black sesame seeds and cilantro.
