For each of these “red grapes disguised as green grapes” which are both an appetizer and a popular passed item at parties, chef James Gottwald spreads a thin layer of room temperature goat cheese into a T shape on his palm and wraps a red grape in it.

He rolls it between his hands to create an even coating. He chills the grapes and then rolls them in finely chopped toasted pistachios.

He serves them in chilled martini glasses with bamboo skewers and garnishes them with an edible orchid.
