For each of these “red grapes disguised as green grapes” which are both an appetizer and a popular passed item at parties, chef James Gottwald spreads a thin layer of room temperature goat cheese into a T shape on his palm and wraps a red grape in it.

He rolls it between his hands to create an even coating. He chills the grapes and then rolls them in finely chopped toasted
