In the often-brawling game of deal making, hospitality executive Tilman J. Fertitta would weigh in as a heavy weight.

In just the past three months, the founder, chairman and chief executive of Houston-based Landry’s Inc. has acquired the Morton’s steakhouse chain of Chicago, the McCormick & Schmick’s seafood chain of Portland, Ore., and the celebrity-infused Beso Steakhouse in Las Vegas out of bankruptcy court.
