Stephan Pyles to debut new restaurant in Dallas

DALLAS Chef Stephan Pyles said he and his partners plan to open an “international small plates” restaurant called Samar in downtown Dallas in September.

Pyles, one of the Southwest-cuisine pioneers at the now-closed Routh Street Cafe and at his current Stephan Pyles restaurant in Dallas, said the 70-seat restaurant will feature the cuisines of India, Spain and the Eastern Mediterranean. He said he is targeting a check average of $25 to $30 per person, excluding beverages, in the 2,800-square-foot space on Ross Avenue in the city's Arts District. A 35-seat terrace will overlook downtown and feature a hookah lounge.

His partners are George Majdalani and Michael Welch. Pyles has hired Vijay Sadhu as executive chef.

“Samar” is Arabic for late-night conversations, especially those softly spoken between lovers. The new restaurant's design will feature Moroccan, Turkish and Indian patterns and detailing, with jewel tones in paprika, saffron and chartreuse.
