Scala to create restaurant concepts for Hilton

NAPA Calif. Donna Scala, chef/owner of Bistro Don Giovanni in Napa, Calif., is working with Hilton Hotels Corp. to develop new restaurants for properties around the country.

Scala is currently developing a new concept called Urban Tavern for the San Francisco Hilton, which is scheduled to open in March. The restaurant will feature a continental menu with artisanal charcuterie and cheeses, as well as various daily specials. A bollito misto cart serving boiled meats with various sauces might be available one day a week, for example, or Neopolitan lasagna on another, Scala said.

 

“People love having something they crave and that they’ll come in for,” said Scala. “Sometimes when chefs change the menus so often people don’t know what to crave.”
