Rubio's promotes Simon to COO

CARLSBAD Calif. Rubio's Restaurants Inc. said Tuesday it has promoted Marc Simon to the newly created position of chief operating officer.

Simon, who joined Rubio’s in November 2007 as senior vice president of operations, will oversee operations for the Rubio’s Fresh Mexican Grill chain. He will report to Daniel Pittard, Rubio's president and chief executive.

Prior to joining Rubio’s, Simon was chief executive of America’s Incredible Pizza Co. in Tulsa, Okla., and from 1994 to 1998 he served as vice president for corporate development for McDonald’s Corp. Simon was involved in bringing the Chipotle Mexican Grill chain to McDonald’s and later served as a regional director for that brand, which the burger giant later sold.

Based in Carlsbad, Calif., Rubio’s operates, licenses or franchises more than 195 locations in California, Arizona, Colorado, Utah and Nevada.
