Fox and Hound opens new prototype

Fox and Hound Restaurant Group has debuted a scaled-down prototype with the opening earlier this month of a new store in Harrisburg, Pa.

Witchita, Kan.-based Fox and Hound, which has 85 Fox and Hound/Bailey’s Sports Grille units and owns and franchises the 59-unit Champps Entertainment chain, also introduced a chainwide menu revamp, said Matt Durbin, Fox and Hound’s vice president of marketing.

The new Harrisburg, Pa. prototype is about 7,000 square feet, Durbin said, compared to the standard 9,000-square-foot casual-dining store. It also features lighter colors, updated décor, sports ticker and televisions that make it a “sports fan nirvana,” he said.

Fox and Hound, which has an average per person check of $12 to $14, also has introduced upgraded pizzas, pot-roast sliders and pretzel “dunkers” to its best-sellers of buffalo wings, chicken tenders and burgers, Durbin said.

Like many of the sports-bar casual-dining restaurants, Fox and Hound maintains extended hours. Ken Syvarth, Fox and Hound’s chief operating officer, said, “Our kitchen doesn't close until we do, so guests can enjoy our great tasting food and drinks until 2 a.m. seven nights a week.”

Durbin said Fox and Hound’s sister concept, Champps Entertainment Inc., plans to open a new store in June in Collegeville, Pa., bringing the total for that sports-bar concept to 46 corporate stores and 14 franchised units.
