Fleming's gives fixed-price meal a tropical twist

NEWPORT BEACH Calif. Fleming’s Prime Steakhouse & Wine Bar said it would introduce on Friday a $35.95 three-course meal featuring Caribbean flavors.

Diners have a choice of two starters: Butter Lettuce Salad or Beach House Garden Soup. For the main course, diners pick a side dish and one of three entrees: Steak Caribe, a jerk-seasoned hanger steak with parsley-garlic sauce and red onion salsa; Kingston Banks Roast Chicken marinated in coconut milk with ginger, roasted sweet potatoes and plantation bacon; and Salmon Citron, a citrus-pepper and garlic marinated broiled salmon steak with black bean cassoulet. Dessert is a pineapple tart with vanilla ice cream and caramel sauce.

Marian Jansen op de Haar, Fleming's director of wine, has suggested wine pairings for each course. The spring menu will be available nationwide at each of the chain’s 62 locations through June 20, a company representative said.
